Heart of Ice

During this brief summer break, I'd like to share a yummy, healthy, low-calorie recipe you can make at home without an ice cream maker. Trust me, it’s absolutely delicious!

Ingredients

Makes 8-10 servings:

Ice cream

-  150 g cashews
-  90 ml coconut cream (21% fat content)
-  20 g coconut oil
- 1½ tbsp peanut butter
- 1½ tbsp agave syrup

Coating

- 125 g dark chocolate
- 1-2 tbsp coconut oil

Instructions

Soak cashews overnight or for at least an hour in boiling water, then drain well.

Transfer to a mixing bowl or blender jug with the other ingredients and blend for several minutes until you have a smooth, creamy consistency that is not runny.

Pour into silicone moulds and leave to set in the freezer for a couple of hours.

Melt chocolate in a double boiler. Add oil to make it smooth and runny.

Unmould ice cream lollies and dip thoroughly in chocolate coating. Use a fork to drain and place on a sheet of baking paper.

Wait a few minutes for the chocolate to set completely, then put them right back in the freezer.

It’s best to take them out at least 15 minutes before serving.

NOTE: Feel free to adapt the recipe by trying other flavours. Personally, I’ve tried praline (using hazelnut purée) and coffee (using strong coffee),  but definitely have a preference for the toffee-like flavour of peanut butter.

As for moulds, I’ve also tested different shapes and sizes, and it turns out that the cereal bar ones are the most convenient for me, since I don’t have any proper popsicle moulds with wooden sticks.
